Chef de Partie - Pastry - The Buffet
The Chef de Partie – Pastry is responsible for overseeing a designated pastry production area within The Buffet at Wynn Las Vegas. This role supports the creation and execution of high-quality desserts, pastries, breads, and specialty items while maintaining the highest standards of presentation, consistency, and culinary excellence. The Chef de Partie leads daily station operations, provides guidance to pastry team members, and ensures all products reflect Wynn Las Vegas' luxury dining standards.
Key Responsibilities
Pastry Production & Execution
- Prepare and execute a variety of pastries, desserts, breads, cakes, and specialty confections according to established recipes and standards
- Ensure all products are produced with consistency, accuracy, and exceptional presentation
- Monitor production levels to support business demands and buffet replenishment needs
- Maintain proper portion control and minimize product waste
Product Quality & Standards
- Ensure all ingredients meet freshness and quality requirements
- Maintain consistency in flavor, texture, appearance, and overall guest experience
- Uphold Wynn's luxury presentation and culinary expectations across all pastry offerings
Station Leadership & Team Support
- Lead daily operations within an assigned pastry station
- Provide direction, support, and mentorship to Pastry Cooks and team members
- Execute orders efficiently during high-volume service periods
Buffet Presentation & Replenishment
- Ensure pastry displays remain visually appealing, fully stocked, and guest-ready throughout service
- Monitor buffet presentation standards and execute timely replenishment of products
- Assist in creating attractive pastry displays and seasonal presentations
Food Safety & Sanitation
- Follow all health, safety, sanitation, and food handling procedures
- Maintain proper storage, labeling, temperature controls, and product rotation
- Ensure cleanliness and organization of workstations, equipment, and production areas
Inventory & Operational Support
- Assist with inventory counts, ordering, requisitions, and stock management
- Follow FIFO procedures and proper product rotation practices
- Complete opening, side work, and closing duties assigned
- Report on equipment maintenance concerns and operational issues to leadership
Team Collaboration
- Work collaboratively with Pastry leadership, culinary teams, and venue management
- Communicate effectively to ensure smooth kitchen operations and service execution
- Assist other culinary areas when business needs require
Compliance & Brand Standards
- Adhere to Wynn grooming, uniform, and professional appearance standards
- Follow all company policies, culinary procedures, and department guidelines
- Represent Wynn’s service culture in all aspects of the role
Education & Experience
- High school diploma or equivalent required
- Minimum 3 years of pastry, baking, or dessert production experience required
- High-volume resort, buffet, hotel, or restaurant experience preferred
- Candidates must be at least 18 years of age
Knowledge & Skills
- Strong knowledge of pastry techniques, baking methods, and dessert preparation
- Understanding of chocolate work, cake production, breads, and specialty confections preferred
- Ability to execute multiple production priorities while maintaining quality standards
- Ability to work efficiently in a fast-paced, high-volume environment
Licenses & Certifications
- Ability to obtain and maintain all required work cards
Work Environment
- High-volume buffet operation within a luxury resort setting
- Fast-paced pastry kitchen requiring precision, creativity, and consistency
- Flexible schedule required, including evenings, weekends, and holidays
