Cook I - Wok
The Cook I – Wok is responsible for preparing and executing high-quality wok-fired dishes in accordance with Wynn Las Vegas standards. This role requires strong foundational cooking skills, attention to detail, and the ability to maintain consistency, speed, and presentation in a high-volume, luxury dining environment.
Key Responsibilities
Food Preparation & Execution
- Prepare wok-based dishes according to established recipes and standards
- Execute dishes with consistency, proper technique, and high-quality presentation
- Maintain proper portion control and minimize waste
- Assist with mise en place and station setup
Product Quality & Standards
- Ensure all ingredients meet freshness and quality standards
- Maintain consistency in flavor, texture, and appearance of all dishes
- Uphold Wynn’s luxury presentation and culinary expectations
Wok Technique & Cooking Skills
- Demonstrate strong foundational wok skills, including proper heat control and timing
- Execute stir-fry, sautéing, and sauce integration techniques effectively
- Continue developing cooking techniques under the direction of leadership
Station Execution & Support
- Maintain a clean, organized, and fully stocked workstation
- Ensure proper setup and breakdown of wok station
- Execute orders efficiently during high-volume service periods
Food Safety & Sanitation
- Follow all health, safety, and sanitation standards
- Maintain proper food storage, labeling, and temperature control
- Ensure cleanliness and organization of work areas at all times
Team Collaboration
- Work collaboratively with chefs, kitchen staff, and service team members
- Communicate clearly to support smooth kitchen operations
- Assist other stations as needed to maintain service standards
Operational Responsibilities
- Complete opening, side work, and closing duties assigned
- Assist with inventory, prep lists, and FIFO stock rotation
- Participate in pre-shift meetings and daily briefings
Compliance & Brand Standards
- Adhere to Wynn grooming, uniform, and professional appearance standards
- Follow all company policies and culinary procedures
- Represent Wynn’s service culture in all aspects of the role
Education & Experience
- High school diploma or equivalent required
- Minimum 1 year of cooking experience required; wok or Asian cuisine experience preferred
- Experience in a high-volume setting preferred
- Candidates must be at least 18 years of age
Knowledge & Skills
- Basic understanding of wok cooking techniques and kitchen operations
- Ability to work quickly and efficiently in a fast-paced environment
- Strong attention to detail and commitment to quality
- Team-oriented mindset with effective communication skills
Licenses & Certifications
- Ability to obtain and maintain all required work cards
Work Environment
- High-volume restaurant within a luxury resort setting
- Fast-paced kitchen requiring speed, precision, and consistency
- Flexible schedule required, including evenings, weekends, and holidays
