Culinary Trainee - The Buffet
The Buffet Culinary Trainee supports the preparation and execution of high-quality menu items within The Buffet at Wynn Las Vegas. Working alongside experienced culinary professionals, the Buffet Culinary Trainee assists with food preparation, station operations, product quality, and service execution across multiple kitchen stations while contributing to a luxury dining experience that reflects Wynn Las Vegas' service and culinary standards.
Key Responsibilities
Food Preparation & Execution
- Assist chefs and cooks in the preparation and production of menu items according to established recipes and specifications
- Prepare ingredients, perform basic cooking techniques, and support daily production needs
- Assist with mise en place, station setup, and service preparation
- Support buffet replenishment and production needs during service periods
Product Quality & Standards
- Maintain consistency in food quality, appearance, and presentation
- Follow established recipes and portion control standards
- Uphold Wynn's luxury culinary and presentation standards
Station Support & Organization
- Maintain clean, organized, and properly stocked workstations
- Assist with opening, side work, and closing duties
- Properly store, label, date, and rotate products following established procedures
- Support multiple kitchen stations based on operational needs
Food Safety & Sanitation
- Follow all health, safety, sanitation, and food handling procedures
- Maintain proper food storage, labeling, temperature control, and product rotation
- Ensure cleanliness and organization of kitchen work areas and equipment
Team Collaboration
- Work collaboratively with chefs, cooks, and culinary team members
- Communicate effectively to support efficient kitchen operations
- Assist other kitchen areas and stations as assigned
Operational Responsibilities
- Follow production schedules and assigned preparation lists
- Assist with inventory organization and stock rotation using First In, First Out (FIFO) procedures
- Maintain proper use and care of kitchen tools and equipment
Compliance & Brand Standards
- Adhere to Wynn grooming, uniform, and professional appearance standards
- Follow all company policies and culinary operating procedures
- Represent Wynn’s service culture in all aspects of the role
Education & Experience
- High school diploma or equivalent required
- Minimum one year of culinary experience in a restaurant, hotel, resort, or similar food service environment required
- High-volume restaurant or resort experience preferred
- Candidates must be at least 18 years of age
Knowledge & Skills
- Demonstrated basic knife skills and food preparation techniques
- Basic knowledge of culinary methods, kitchen operations, and food safety practices
- Ability to read, understand, and follow recipes accurately
- Ability to work efficiently in a fast-paced environment
- Ability to follow direction and work effectively as part of a team
Licenses & Certifications
- Ability to obtain and maintain all required work cards
Work Environment
- High-volume buffet operation within a luxury resort setting
- Fast-paced kitchen environment requiring efficiency, teamwork, and adaptability
- Flexible schedule required, including evenings, weekends, and holidays
