Restaurant General Manager (Basilico) - (All Day Dining & Italian Specialty)

The Restaurant General Manager assists the Director of F&B with the management of Basilico, in line with Conrad standards, brand pillars and prescribed Hilton policies and procedures.

As an Restaurant General Manager, you’re not just elevating the dining experience – you’re spreading the light and warmth of hospitality by delivering memorable experiences that make the stay for every guest.

Here’s what you’ll do during a typical day:

  • Assist in the operations, to ensure that guest satisfaction is monitored and where appropriate, rectified throughout their meal experience
  • Always be present in operations during the “golden time”.
  • Assist in the preparation of the department Sales and Marketing plans
  • Ensure that the outlet operational budget is in line and cost are strictly controlled maximizing profitability
  • Maximize profitability of the restaurant by increasing turnover (revenues and covers) as a first priority and controlling costs as a second priority
  • Ensure guest needs and guest expectations are met by providing an efficient and professional service
  • Liaise with the Kitchen to ensure a consistently good standard of food quality, efficient profitability and creative presentation

  • Liaise with Housekeeping to ensure a consistently high standard of cleanliness, repair and maintenance and to provide a smooth flow of linen supplies, flowers and uniforms
  • Liaise with the beverage department to ensure the efficient supply of beverages
  • Liaise with Stewarding to ensure a high standard of cleanliness, maintenance and adequate provisions of operation equipment
  • Prepare all operations report on a weekly and monthly basis
  • Carry out any other responsibilities as requested as directed by Assistant Director of F&B or Director of F&B
  • Liaise with the Learning & Development Department on departmental training needs

In addition, this role requires the following minimum qualifications:

  • Diploma or degree in Hospitality, Hotel Management, Restaurant Management, or related discipline is an advantage.
  • Minimum 5–8 years of progressive F&B experience, including at least 2-3 years in a General Manager or senior restaurant management role within a full-service Italian fine dining or upscale Italian restaurant environment.
  • Strong operational knowledge of authentic Italian cuisine and service standards, including menu curation, guest experience design, and traditional Italian dining culture.
  • Proven experience managing end-to-end restaurant operations, including P&L accountability, cost control, budgeting, forecasting, inventory management, and supplier relations.
  • Solid understanding of wine programs, with emphasis on Italian wine regions, pairing, and cellar management.
  • Demonstrated ability to lead large teams, manage performance, and maintain service excellence in a high-volume, fast-paced, upscale dining environment.
  • Strong leadership, communication, interpersonal, and stakeholder management skills.
  • Ability to uphold and drive consistent high standards in guest experience, service execution, and operational efficiency.
  • High attention to detail with a strong understanding of fine dining or premium restaurant service culture.
