Commis 2 North Indian
We are seeking a detail-oriented and efficient Commis 2 North Indian to join our culinary team in Kochi, India. In this role, you will work under the guidance of senior chefs to prepare and execute North Indian dishes while maintaining the highest standards of food quality, safety, and presentation. You will be an integral part of our kitchen brigade, contributing to a well-organized and collaborative cooking environment.
- Prepare and cook North Indian dishes according to established recipes and chef specifications
- Execute proper mise en place and maintain an organized, clean workstation throughout service
- Operate kitchen equipment safely and efficiently, including tandoors, grills, and stovetops
- Follow food safety and hygiene protocols consistently to ensure compliance with health standards
- Assist in the preparation of ingredients, including cutting, marinating, and portioning
- Collaborate with team members to ensure timely and accurate food preparation during service
- Monitor cooking times and temperatures to maintain consistent quality and taste
- Respond promptly to chef instructions and adapt to changing kitchen demands
- Maintain inventory awareness and communicate ingredient needs to senior staff
- Support kitchen operations by assisting with setup, breakdown, and general maintenance
- Proficiency in North Indian cooking techniques and flavor profiles
- Strong knowledge of North Indian spices, ingredients, and traditional cooking methods
- Demonstrated experience with tandoor cooking and clay oven operations
- Solid understanding of food safety, sanitation, and hygiene standards
- Competent knife skills and food preparation techniques
- Ability to work efficiently in a fast-paced kitchen environment
- Strong organizational and time management skills
- Excellent teamwork and communication abilities
- Ability to follow instructions and take direction from senior chefs
- Physical capability to stand for extended periods and handle kitchen demands
- Familiarity with local ingredient sourcing in the Kochi region (preferred)
- Previous experience in a professional kitchen setting (preferred)
- Understanding of food costing and portion control (preferred)
